Used in the Quebec maple syrup industry, which is among the most important primary industries in Quebec. Quebec is the principle producer of maple syrup both nationally and internationally. This thermometer was used by Lois Dorval, the donor's maternal great-uncle, in Grande-Ligne, now known as St. Blaise sur Richelieu, Quebec. Likely made between 1905 and 1911 because C. Wilder was purchased by W.E. Gurley and moved to Troy in 1905. The Manson Campbell Company merged with Gray-Dort in 1907. The name of the company changed to Wm. Gray-Sons-Campbell Limited in 1911.

Fonction

Device used to measure the temperature of sap when it is heated to reduce water so as to produce maple syrup.

Technique

Thermometer designed specifically for the maple syrup industry. Water must be boiled off the sap until the liquid achieves the correct density. 103 degrees C, the temperature indicated on the thermometer, is the minimum temperature the sap must reach for it to become maple syrup. This thermometer would probably have been used with an evaporator.

The temperature scale has has the numbers 80, 90, 100 and 110, with markings for individual units between each. To the proper left of the glass, the number "103" is marked. Directly below it is the word "LOW" and directly above it is the word "HIGH". Also on the proper left, down near the low end of the scale is the MFR name "THE MANSON CAMPBELL/ COMPANY LTD./ DETROIT, MICH./ AND CHATHAM, ONT.". On the higher side of the scale on the proper left reads "C.WILDER/ CO./ TROY, N.Y."
