Smoking meat or fish is a preservation method for keeping food longer in good condition. Home smoking meats and fish safely means understanding the science behind the process. Preparation, temperature control, and selecting the right type of smoke all lead to a finished product that's safe, tasty, and longer lasting. Preparation usually involves cutting the meat or fish to a suitable size, salting or brining to remove moisture, and air-drying to create a pellicle, or sticky moisture barrier.
